JAMMU: Ten-day long Royal Food Festival Jewels of India commenced here at Hotel K C Residency on Friday. The buffet spread will feature authentic culinary delicacies prepared and presented by Celebrity Chef, M Rehman and his team of expert chefs.
Cooking for the Maharajahs was never easy. The kitchens of Royal India were nothing but lavish. In some palace kitchens, global cuisines were frequently experimented with local herbs! We know that Emperor Ashok adhered to Buddhist vegetarian diet that was simple and lightly spiced. We know when the Mughals arrived the whole tapestry of cuisine underwent change as they permeated deep into parts of India and with time, the Mughal cuisine interwove with the regional cuisines to bring forth new cuisines, new flavours that have stayed on as part of royal Indian heritage.
The Kings, Maharajas or the Nizams were invariably connoisseurs of good food. The royal palaces maintained fine kitchens and employed the best cooks. Often there would be separate cook for each recipe. And then again there would be competition amongst them as to whose table provided the most unusual and luxurious fare. But gone are the Kings and Maharajas and their rich repast. What remains is history as witness. Unfortunately there is not enough documentation of the ancient food habits of all the royalty.
During this ten-day long feast delicacies from the royal kitchens of Kashmir, Patiala, Rajasthan, Awadh, Mysore, Kolhapur and Hyderabad will be served in combinations. Some of the famous dishes are Lucknowi Mahi Dum, Murgh Surkh Tikka, Tangri Asif Jha, Galawati Kebab, Gosht Barrah Boti, Anannas Ke Tikke, Dhungara Paneer Tikka, Aatishi Khumb, Meve Ke Kakori, Subz Galawati, Mahi Rezaala, Murgh Korma Wajid Ali, Achar Ka Gosht, Lahori Kadhai Paneer, Rohaili Khumb Makai, Tamater Dulmeh, Subz Katre Masale Me, Bhindi Shahzadi, Ittr Ki Dal, Awadhi Gosht Pulao, Nizami Tarkari Biryani, Khubani Ka Meetha, Sheer Korma and Gajrela.
